Directions
- Add the chopped onion to the butter, but don’t brown it.
- Add the flour and mix. ≈ 4 min
- Add the peeled and coarsely chopped apples, the broth, and the salt, then cook until the apples are easily mashed.
- Blend the cooked soup until it is smooth. ≈ 4 min
- In a bowl, vigorously whisk the egg yolk, then add the cold milk, and pour this mixture into the soup. ≈ 4 min
- Let it simmer for a moment longer: the soup is ready to be served. ≈ 2 min
- If you like, you can pour melted butter over it, seasoned with a mild chili pepper. ≈ 3 min
