Green sauce is a specialty of Hesse, a summer dish that is typically enjoyed with apples and, optionally, meat. It has two main variations: the Frankfurt-style green sauce in the south and the Kassel-style green sauce in the north.

Directions

  1. Wash the herbs and remove the thick stems. ≈ 2 min
  2. Roughly chop the herbs on a cutting board, then mix them with the yogurt to create a thick sauce. ≈ 8 min
  3. Pour the sauce into a bowl, add the sour cream, vinegar, mustard, and chopped eggs, and mix well. ≈ 4 min
  4. Season with salt and pepper. ≈ 2 min

  • 1 container of yogurt (500g)
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of strong mustard
  • 2 hard-boiled eggs per person
