- Cut the prepared duck (see page 44) into pieces as needed. ≈ 8 min
- Finely chop the green chili peppers, then chop the other spices as well, except for the galangal, turmeric, lemongrass, and onion. ≈ 8 min
- Finely chop the onion. ≈ 8 min
- Heat half a bottle of coconut beer in a saucepan.
- Fry the onion slices until they are golden brown.
- Add the remaining spices (except for turmeric, galangal, and lemongrass), then continue cooking until they are half-cooked.
- Add the pieces of duck, as well as the leaves of turmeric, ginger, and lemongrass. ≈ 3 min
- Cover and cook over low heat, stirring occasionally.
- Add 1 cup of water, reduce the heat, and then simmer until the duck meat is tender and cooked through.
- If necessary, add 1 cup of water 2 to 3 times and continue cooking for approximately 3 hours, until the meat is completely tender.
