“Ayam lado hijau” is a traditional dish from the western Sumatran region. Similar to the “duck lado hijau” from Bukittinggi, this green chicken dish is characterized by its spicy seasoning and the use of green chili peppers.

Directions

  1. The chickens are first seasoned with salt and lemon juice, then allowed to rest.
  2. While the onions are cooking, finely chop all the ingredients, except for the bay leaves. ≈ 8 min
  3. Heat the oil in a pan, then add the onion and cook until it is softened and fragrant.
  4. Next, add the chopped spices and cook again until they are well-infused and slightly browned.
  5. Add the chicken and bay leaves, and simmer over low heat until the chicken and spices are well infused.
  6. Once the color of the hot pepper has slightly turned towards gold or brown, add lemon juice and let it rest for about 10 minutes.
  7. The Bokittinggi chickens, with their distinctive green skin, are ready to be enjoyed. ≈ 3 min

  • 1/2 chicken (approximately 6-7 pieces)
  • The chicken is seasoned with salt and lemon juice, then allowed to rest.
  • 1 unit of oil paint
  • 3 red onions, sliced, for cooking
  • 200 g of green chili peppers
  • 10 red onions
  • 5 cloves of Allium sativum (garlic)
  • The size of a finger
  • Half a thumb-sized piece of ginger
  • 1/2 teaspoon of pepper
  • 1/4 cup of cumin
  • 3 cashew nuts
  • 1/2 nutmeg
  • 3 lime leaves
  • Width of turmeric leaves
  • Half a piece of ginger
  • 2 tablespoons of lime juice
  • 2 pieces of galangal (not chopped)
