Directions
- Sprinkle the khoa in a heavy-bottomed saucepan, stir for 30 seconds, add the sugar and stir constantly until it melts. ≈ 4 min
- Add the milk and stir for 3 to 4 minutes, until the mixture thickens and forms a ball. Pour onto a plate.
- Once it has cooled, knead it, divide it into small balls, and flatten each ball into a small disc.
- Boil the water and sugar together until the syrup thickens slightly (reducing by a quarter), and keep it warm.
- Mix the flour, rice flour, and semolina, and gradually add water until you have a dough that is neither too runny nor too thick. ≈ 4 min
- Heat the oil, then reduce the heat.
- Dip each pancake individually in the batter and fry them, turning frequently, until they are golden brown.
- Drain the fruit and immediately immerse it in the hot syrup. Allow it to soak for at least an hour to fully absorb the syrup.
