Directions
- Sift the flour twice, then roast it over low heat in a frying pan, stirring constantly. When it begins to change color slightly, remove it, let it cool, and sift it again: these sifting steps are what give halva its fine texture.
- Add the flour to the frying pan and cook for 5 to 6 minutes, then add the butter and vegetable oil and mix well. You can reserve some of the butter for later, to preserve its flavour.
- Remove from the heat and let cool: if the sugar is added when it’s too hot, it will melt and the halva will become hard.
- Add the powdered sugar, followed by the ginger and cardamom, gradually, tasting as you go to adjust the amount of sugar and spices. ≈ 4 min
- Add the walnuts, saffron, and rosewater, and mix well by hand. ≈ 4 min
- Place the halva in a serving dish or individual ramekins, or shape it using a spatula in the traditional way. Garnish with pistachios or coconut. ≈ 10 min
