Gazpacho is the quintessential Spanish summer soup. This version features tomatoes, bell peppers, cucumber, garlic, and bread, all seasoned with cumin and sherry vinegar, and then blended and served very cold in a glass.

Directions
- Place the vegetables, breadcrumbs, cumin, vinegar, oil, and salt in a large bowl, and cover with cold water. ≈ 3 min
