Golden new potatoes, buttered and simmered with thyme, vegetable broth, onion, garlic, and parsley: a gentle Catalan side dish.
These new potatoes are slowly simmering in the broth with thyme. They are best served hot, in their flavorful sauce with onion and parsley.

Directions
- Peel the apples, or shape them using a suitable tool so that they are all the same size. Wash them, then place them in a pot with half the butter or oil paint. Add the sprig of thyme and the broth, then simmer gently.
- Dice the peeled onions and sauté them in the remaining butter with salt, chopped parsley, and finely chopped garlic. Then, combine everything with the apples. ≈ 8 min
- Remove the thyme and serve the warm apple and root vegetables on a plate, with their sauce drizzled over them. ≈ 2 min
