Directions
- First, thoroughly wash the chicken breast and cut it into evenly sized pieces. ≈ 8 min
- Use a knife or a food processor to make the puree.
- In a bowl, mix equal amounts of flour and cornstarch. ≈ 4 min
- Gradually add water until you reach a thick, paste-like consistency, but be careful not to add too much. ≈ 3 min
- Next, add the chicken puree and the egg whites, mixing well. ≈ 4 min
- If the mixture is too dry, add a little more water until you achieve a slightly sticky, but not liquid, consistency. ≈ 3 min
- Heat some oil paint in a pan.
- Also, prepare a pot of hot water. ≈ 3 min
- Pour evenly distribute the chicken puree, add it in small portions to the hot pan (you can use a large, round spoon to make this easier).
- Once the pieces have floated, remove them from the pan and immerse them in hot water to remove any excess oil paint.
- Once the pan is hot, add the oil paint.
- Add the onion, garlic, and shallots back in once they have released their aroma, then add the other vegetables.
- If using mushrooms, brown them first, then add the other vegetables and pieces of chicken. ≈ 3 min
- Season with salt and cooking wine, then mix well and serve. ≈ 4 min
