French Dip Sandwich
An American classic, the au jus sandwich is slow-cooked for six hours for tender, flavorful meat. Served on French rolls.
The “au jus” sandwich is also known as the “roast beef au jus sandwich,” and is more commonly called the “French dip sandwich” in America. It originated in downtown Los Angeles, in either 1908 or 1918, when the owner of a local restaurant was making a sandwich for a police officer and accidentally dropped it into a pan of beef broth. The officer liked the sandwich so much that he invited his friends the next day to try this new invention. From that moment on, the “au jus” sandwich became known worldwide. Two Los Angeles restaurants claim to have created this sandwich: Philippe The Original and Cole’s Pacific Electric (P.E.) Buffet. Both restaurants have been in business since 1908.

Directions
- Combine all the ingredients, except the rolls, in a slow cooker or pressure cooker. Simmer for at least six hours.
- Serve the beef on halved rolls. ≈ 2 min
- You can dip the sandwiches ahead of time, or serve them with a bowl of the juices. If you serve the juices separately, remove the pieces of beef from the juices and serve them in a small bowl next to the sandwiches. Dip the sandwiches in the juices as you eat.
