The soft cake, also known as “bløtkake” in Norwegian, is a traditional dessert typically reserved for special occasions. It is usually served on May 17th, the Norwegian national day.

Directions
- whisk the eggs and sugar until light and fluffy. Sift the flour and baking powder into the egg mixture and gently fold in. ≈ 4 min
- Pour the batter into a greased round cake tin (approximately 22 cm in diameter), then bake the cake at 170 °C for 30 to 40 minutes.
- Let the cakes cool completely on a wire rack, then remove them from the pan.
- Cut the cake horizontally into 3 layers. ≈ 8 min
- Sprinkle a little peach juice from the container over each layer. ≈ 2 min
- Spread two layers of fruit jam, peach slices, and vanilla custard on top of each other. ≈ 3 min
- Place the third layer on top of the other two. ≈ 3 min
- Whip the cream with the sugar. ≈ 4 min
- Cover the cake, including the sides, with the whipped cream. ≈ 3 min
- Garnish with berries and/or fruits. ≈ 10 min
