Paella is a traditional Catalan dish that combines several types of fish and seafood. It’s a delicious and flavorful meal, perfect for family dinners or gatherings with friends.

Directions

  1. Peel the seaweed and place it in a food processor along with the tomatoes, thyme sprig, and saffron. Blend until smooth. ≈ 8 min
  2. Heat some oil in a paella pan. Return the shrimp to the pan, then remove them.
  3. Add the squid and cuttlefish, sliced. Cook until they are golden brown. Then add the artichoke hearts and the red chili pepper.
  4. Incorporate the seaweed and tomato puree, and allow it to reduce to the desired consistency.
  5. On the other hand, open the molds. ≈ 3 min
  6. Add the broth, the mold liquid, and the garlic (if you have any). Let it simmer for 20 minutes.
  7. Add the peppers and rice. Cook until almost done, then add a pinch of salt.

  • 4 sea snails
  • 8 shrimp
  • 0.5 kg of mold

  • One bunch of peppers
  • 1 small, red chili pepper
  • Garlic (optional)
  • 400 g of rice
  • 2 litres of fish broth
  • A pinch of salt
  • olive oil
