Grilled snails with garlic and parsley
Escargots, seasoned with olive oil, garlic, and parsley, grilled for ten minutes, then ten more, and flambéed: a traditional Basque recipe.
After being purged and rinsed in salt, the snails are seasoned with a mixture of olive oil, garlic, and parsley, then grilled twice. Finally, they are flambéed with cognac, and served with aïoli or a tomato sauce with a kick.

Directions
- Select live snails with a hard, undamaged shell. ≈ 3 min
- Keep them in a mesh bag for 15 days to allow them to mature. ≈ 3 min
- After this time, remove the dry membrane from the opening with a pin, then cover each snail with salt. ≈ 3 min
- Let them sit for a few minutes to allow any impurities to be released, then wash them thoroughly with cold water. ≈ 2 min
- Place the oil paint, garlic, and parsley in the blender and blend until smooth. ≈ 4 min
- Place the snails in a bowl and pour half of the sauce over them. ≈ 2 min
- Place them on a grill and cook them.
- After 10 minutes, pour over with more sauce and continue cooking for another 10 minutes.
- Finally, flambé the snails in cognac. ≈ 3 min
- Serve with aïoli or a slightly spicy tomato sauce. ≈ 2 min
