Pansit luglog is easily identified by its orange-colored, thick sauce flavored with shrimp paste and shrimp broth. The vermicelli noodles are topped with pork, tofu, shrimp, egg, and smoked fish, with a squeeze of lime for freshness.

Directions
- Filter the soaked purslane seeds. ≈ 3 min
- In a pot, combine the water, roux, and shrimp broth.
- Whisk the flour into the water. ≈ 4 min
- Pour it into the pot. ≈ 3 min
- Bring to a boil until the sauce thickens.
- Season to your liking. ≈ 2 min
- Boil some water in a pot.
- Place the vermicelli in a sieve. ≈ 3 min
- Cook them in boiling water until they are done.
- Drain them and arrange them on a plate. ≈ 2 min
- Coat the vermicelli in sauce, then top with pork and tofu. ≈ 10 min
- Garnish with smoked fish and slices of pork. ≈ 2 min
- Garnish with hard-boiled eggs, cooked shrimp, sliced onions, and fried garlic.
- Serve with lime. ≈ 2 min
