Figatells
A Spanish specialty, “figatells” are meatballs made with ground pork and liver, seasoned to perfection. They are easy to prepare and incredibly delicious.
"Fideus are a culinary specialty of the Spanish Mediterranean coast, particularly the Safor region and Valencia. These meatballs, made from a mixture of ground meat and pork liver, seasoned with various spices, are very popular in this area.

Directions
- Chop the meat and liver into a fine, granular mixture. ≈ 8 min
- Add the spices, chopped parsley, and salt. ≈ 3 min
- Knead the mixture thoroughly. ≈ 10 min
- Some add ground red chili pepper or nutmeg and walnuts to the mixture. ≈ 3 min
- Lay the screen flat on a level surface. ≈ 3 min
- Make round meatballs about the size of an egg. ≈ 3 min
- Place the meatballs on the colander, with enough space between them. ≈ 3 min
- Cut the mesh so that each ball can be enclosed within it. ≈ 8 min
- Use the palm of your hand to flatten the meatballs into the characteristic shape of a “figatell,” which is quite similar to a hamburger. ≈ 4 min
- Cook on a grill or on a griddle.
