Directions
- Soak the beans/peas in water for at least 12 hours to help them soften.
- Drain the vegetables and chop them together with the onion (if using leeks, also add the green leaves), garlic, cilantro, and other herbs until you have a smooth, firm paste. ≈ 8 min
- Using the dough, form small balls. ≈ 3 min
- If desired, they can also be coated in sesame seeds, which will create a softer and crunchier crust. ≈ 3 min
- Place the meatballs in the refrigerator for at least an hour.
- Fry the falafel in hot oil until they are completely golden brown.
