Egyptian falafel with broad beans
Egyptian falafel made with dried fava beans, fresh herbs, cumin, and sesame seeds, shaped into small balls and then fried in hot oil.
For an Egyptian falafel, chickpeas are replaced with dried fava beans, either alone or mixed together. The blend of herbs and spices gives the dish a fragrant flavor.

Directions
- Soak the broad beans in water overnight.
- Rinse them thoroughly. To make them easier to digest, change the water several times; you can also peel them. ≈ 8 min
- Place all the ingredients in a food processor or blender, except for the sesame seeds, and blend until you have a coarse paste. Avoid over-processing the mixture into a smooth puree.
- Add the sesame seeds to the dough. ≈ 4 min
- Shape the dough into small balls and fry them in the oil.
