Directions

  1. Wash and dry the eggplants, then dice them into approximately 1 cm cubes using a large knife. Dice the onions as well, but into smaller pieces. ≈ 8 min
  2. Heat the olive oil in a pan, then add the onions, before adding the eggplants.
  3. Eggplants absorb a lot of oil when raw, but lose that oil once cooked. ≈ 3 min
  4. If oil paint isn’t enough, add a little more (the eggplant seeds will become darker if they are completely saturated with oil paint). ≈ 3 min
  5. Then, add the tomato sauce and season to taste. ≈ 2 min
  6. Spices that require more time to release their aroma, such as rosemary, which should be added before cooking, while other spices should be added afterward. ≈ 3 min
  7. Don’t forget the salt and pepper! ≈ 3 min
  8. To reduce the acidity of tomatoes, you can add a little sugar. ≈ 3 min
  9. Finally, add the cream. ≈ 3 min
  10. It’s not necessary to boil it any further, and this allows the sauce to cool slightly, which helps to prevent children from burning their mouths.
