Directions
- Cook the eggs and eggplants in lightly salted water.
- Once they have cooled, peel the eggs and remove the skins from the eggplants.
- Heat the oil paint in a pan, then add the grapes. Reserve them.
- In the same pan, thoroughly sauté the chopped onion until it is golden brown and crispy, then set aside a portion.
- Bring back the chopped garlic and onion paste.
- Once they start to take color, add the cinnamon, cloves, and cardamom, and stir for a few minutes. ≈ 4 min
- Add the turmeric, chili powder, and salt. ≈ 3 min
- Let the spices really come back to life, then add the cooked eggplant and mix. ≈ 4 min
- Once the mixture becomes smooth, add the chopped green chili peppers and sautéed onions, then continue to cook for a few more minutes. ≈ 3 min
- Finish by crumbling the eggs by hand over the dish: they will mix with the eggplant as you stir. ≈ 3 min
- Before serving, sprinkle with golden raisins and caramelized onions, and serve with warm bread or rice. ≈ 2 min
