Directions
- Wash the eggplants, dry them, remove the ends, and cut them into slices about 3 to 5 mm thick. ≈ 8 min
- Place the slices in a gratin dish or a soufflé dish, and generously cover them with salt. Let them rest for about 45 to 60 minutes (you may need to drain off any water that has formed several times).
- Lay the slices on a baking sheet lined with paper towels and press them firmly. ≈ 4 min
- Replace the absorbent paper several times, until the discs are thoroughly soaked and dry. ≈ 3 min
- Next, turn the now thinner discs over and place them in the flour, removing any excess flour. ≈ 3 min
- In a small pan, pour in about 1 cm of oil paint and heat it up.
- Arrange the eggplant slices next to each other and grill them for about 2 to 3 minutes, turning frequently, until they are a beautiful golden color.
- Next, remove them from the pan, pat them dry on paper towels, let them cool, and season them to your liking with lemon juice and pepper.
