Directions

  1. Estimated preparation time: 25 minutes.
  2. Prepare a marinade using soy sauce, sweet wine, ginger, and crushed garlic.
  3. Remove the skin from the duck breasts, but keep one piece of skin on each. ≈ 3 min
  4. Cut the meat into large chunks, and let it marinate in the marinade for about 15 minutes.
  5. Heat a small amount of the preserved duck breast in a hot pan for a few minutes.
  6. Remove the duck skin, place the marinated duck pieces inside, and cook them over high heat for 3 to 4 minutes, before removing them and placing them in the serving dish.
  7. Heat the remaining marinade by adding 6 cl of water, then strain it through a sieve and use it to glaze the duck breast slices.
  8. Garnish with chives and serve hot. ≈ 2 min
