Doimaj is a specialty of eastern Azerbaijan, in Iran: a mixture of coarsely ground bread, cheese, melted butter, and walnuts, formed into balls by hand.

Directions

  1. Finely crumble the bread in a large bowl, to the consistency of cornmeal or even finer, then gradually add the water (or doogh), mixing as you go. The crumbs should not become soggy like bread soaked in soup; they should just be moist enough to form balls. ≈ 10 min
  2. Grate or finely crumble the cheese and add it to the bread. ≈ 8 min
  3. Melt the butter and add it along with the walnuts.
  4. Thoroughly mix by hand, then press the mixture between your palms to form compact, round or oval balls that do not crumble. ≈ 10 min
  5. If the mixture starts to separate, add a little water and melted butter. ≈ 3 min

  • 4 slices of bread from Tabriz
  • 1 glass of water or doogh (240 ml), or as needed, to moisten the bread
  • 200 g of Tabriz cheese
  • 100 g of butter
  • Chopped walnuts, as needed
