Directions
- Wash the rats. Locate the opening on the thick edge of each rat. Without piercing or tearing it, insert a finger into the opening to loosen the inside; the opening will widen slightly. ≈ 2 min
- Rinse the rice, then mix it with finely chopped dill and parsley, a generous amount of cumin, black pepper to taste (add a pinch of chili flakes if you like it spicy), salt, and a little olive oil if desired. ≈ 4 min
- Insert this farce into each liver, using your fingers. Do not overfill: the liver will expand during cooking, and so will the rice. ≈ 10 min
- Close the opening with a toothpick to prevent the filling from escaping. Do the same for any other openings. ≈ 3 min
- Bring a pot of lightly salted water to a boil in a large pot, and add the rabbits. Cook for about 45 minutes: they will expand, and you will know they are cooked when the rice starts to come out.
- Remove the scallops and let them cool. Once cool, cut them into slices about one inch thick, using a very sharp knife to prevent them from crumbling.
- Heat olive oil in a non-stick frying pan and brown the slices.
