Daifuku, mochi filled with red bean paste
Homemade daifuku made in the microwave: a sweet, very thin mochi dough surrounding a ball of kidney bean paste.
Daihaku is a traditional Japanese dessert made from mochi, a sticky rice cake, rolled and filled with egg custard or black bean puree. There are many variations, but the most common is the white, light green, or pale pink mochi filled with egg custard. The sizes vary, with an average size of about 1.5 cm and a larger size of about 10 cm. Some versions contain whole fruits, while others are filled with fruit puree and egg custard or melon puree.
