Directions
- Soak the lentils for several hours, then pour them into a pot with the crushed wheat and 3 liters of water.
- Cook.
- Cut the meat into pieces and sauté it with chopped onion. ≈ 8 min
- Then, add 3 cups of water and let it simmer until the meat is cooked through.
- Once the liquid has reduced by half, you can add the cooked lentils and rice.
- Peel the cucumbers, cut them in half, and then remove the seeds. ≈ 8 min
- Slice the cucumbers thinly, like carrots. ≈ 8 min
- In a pan, heat up a small amount of oil paint.
- Keep returning the cucumber slices to the water until they are tender (without making them mushy).
- Dice 2 onions and the cloves of Allium sativum (garlic), then sauté them in oil with salt and pepper until they are golden brown. ≈ 8 min
- Also, separately, dry the mint leaves in a small amount of oil paint for about 1 minute, then set them aside.
- Add the cooked green beans, half a bowl of hot soup, and half a bowl of roasted onion to the pot. ≈ 3 min
- Once the ingredients are cooked and the soup has thickened, you can add salt, pepper, and kashk.
- Wait for 5 minutes, then remove the pot from the heat.
- Pour servir, place the stew in a dish and garnish with half of the fresh parsley, fried onions, kashk, and fresh parsley.
