These thin, sliced potato fries are a popular snack in Bengal. They are very crispy and are typically seasoned with peanuts, curry leaves, and a blend of spices.

Directions

  1. Peel the apples and cut them into thin slices of about 2 mm thick, using a knife or a vegetable slicer. Immediately immerse them in a large bowl of cold water to prevent them from browning. ≈ 8 min
  2. Rinse the slices two to three times in plenty of water until all the starch is removed: this will make the French fries crispier. Drain.
  3. Lay the slices on a clean cotton dishcloth and let them air dry. You can gently pat them with another dishcloth. If any water remains, they will soften when fried.
  4. Once they are dry, stack 5 to 6 slices together and cut them into very thin strips, like matchsticks. ≈ 8 min
  5. Heat the oil paint in a large pot until it reaches approximately 180 °C, but without it smoking. With a large amount of oil paint, the strips do not form a solid mass.
  6. Fry the peanuts for 20 seconds, then the curry leaves for 10 seconds, and set aside in a container.
  7. Dip a small handful of strips into the warm oil paint: many bubbles will form. Once the bubbles start to decrease after about 3 minutes, continue cooking for another 2 minutes to achieve a beautiful golden color.
  8. Remove the apples from the oil and place them in a sieve or bamboo basket to allow the steam to escape. In a dish, they would soften.
  9. In a small bowl, combine the pepper, salt, black salt, chaat masala, and chili powder. ≈ 4 min
  10. Just before serving, sprinkle the French-fried apples with this mixture of peanuts and curry leaves. If seasoned too early, they will absorb moisture and become soft. When stored without spices and in an airtight container, they will remain crispy for up to 7 days.
