The crescent is a classic pastry, made with puff pastry. Here’s how to make it.

Directions
- Wheat flour (type 55): 600 g ≈ 3 min
- butter: 300 g ≈ 4 min
- Prepare the starter by dissolving the yeast in 100 ml of lukewarm water (approximately 0.1 litre). ≈ 3 min
- Then, add 150g of flour (=0.250 litre). ≈ 3 min
- Mix. ≈ 4 min
- Cover with a cloth. ≈ 3 min
- Allow to rest in a cool room (15 ~ 18 °C) for approximately 12 hours.
- Now, place 450g of flour (equivalent to 0.750 litres), salt, sugar, milk, and 10ml (equivalent to 0.1 litre) of lukewarm water in a large mixing bowl. ≈ 3 min
- Add the starter from the previous day. ≈ 3 min
- Combine all the ingredients and knead until the dough is soft and smooth. ≈ 10 min
- Form a circle. ≈ 10 min
- Cover with a cloth. ≈ 3 min
- Allow to rise for 1.5 hours in a warm place.
- Refrigerate the dough and let it rest for 2 hours.
- Spread the cooled dough into a rectangular shape on a floured surface.
- Place the softened butter in the center. ≈ 3 min
- Fold the dough in thirds. ≈ 3 min
- Extend it and fold it in half four times. ≈ 3 min
- Straighten it out again and fold it in thirds. ≈ 3 min
- Refrigerate for 30 minutes.
- Then, roll out the dough into a large square, about 4mm thick, on a floured table. ≈ 4 min
- Cut three strips and then cut triangles out of each strip. ≈ 8 min
- Roll these triangles, starting with the base that you have cut out to a width of 1 cm. ≈ 10 min
- Place the crescent-shaped ends on a dry surface. ≈ 3 min
- Curve them slightly. ≈ 3 min
- Applying the egg wash (gild) with a soft brush (passer un coup de pinceau sur le crescent délicatement pour éviter de les faire retomber).
- Cover with a cloth, then let it rest for 1 hour.
- Before putting it in the oven, I’ll give it another coat of gold paint.
- Bake the crescent rolls in the preheated oven at thermostat setting 8 (240 °C) for 5 minutes.
- Reduce the oven temperature to setting 7 (200 °C) and continue baking for another 15 minutes.
- Finally, place the crescent rolls on a wire rack to cool.
