Kidney beans with rice, in a Creole style
Slow-cooked kidney beans, simmered for hours with celery, bell pepper, spices, and smoked sausage, served over white rice. A hearty Creole dish.
This Louisiana dish is often prepared on Mondays, using the leftover ham from Sunday. It’s also delicious without the ham.
