Pan-fried, salted cod, simmered for five minutes in a sauce of red and green tomatoes and peppers, in an earthenware pot.
This monkfish with tomato and pepper is from the kitchen of Alpont, in the Valencia region. The sauce, similar to a “samfaina,” is the star of the dish.

Directions
- Chop the peppers into pieces and mince the garlic. Place them in a bowl with a little olive oil. ≈ 8 min
- Combine the tomatoes, pour them into the pot, and let them cook with the remaining ingredients, adjusting the seasoning with salt and sugar as needed.
- While the sauce is cooking, dredge the cod in flour and fry it in a separate pan.
- Add the fried cod pieces to the sauce and cook for about 5 minutes.
