Directions
- Wash approximately 700g of spiderfish (a type of cod) for 5 servings (about 140g each) over 3 days, changing the water frequently; it is best to purchase the tail section of the fish. ≈ 2 min
- After the immersion, remove the skin, bones, and scales, then cut into small pieces. ≈ 8 min
- Finely chop the onions and sauté them in oil and butter, making sure they don’t brown too much. ≈ 8 min
- Chop the parsley ≈ 8 min
- Coat the cod pieces with plain flour, then place them in the prepared onion mixture, in a glass dish. ≈ 3 min
- First, coat the cod pieces in flour, then add the milk, a little butter, finely chopped parsley, and salt.
- Make sure the milk completely covers the fish. ≈ 3 min
- If not, add a little water. ≈ 3 min
- Let it simmer…
- (approximately 4 hours), while ensuring it doesn’t stick (use a wooden spoon).
- Sprinkle with ground black pepper ≈ 2 min
- Season with white polenta. ≈ 2 min
