Directions
- Sift the flour. ≈ 2 min
- Dissolve the starter in warm water (maximum 25 degrees Celsius), then add the oil paint. ≈ 3 min
- Add half of the flour and begin to knead until a smooth dough forms, even if it is a little sticky. ≈ 10 min
- Add the remaining flour, salt, and continue kneading for about 10 minutes.
- Let the dough rest for about 3 hours.
- Divide the dough in half and roll it out with a rolling pin until you have thin strips. ≈ 4 min
- Cut the strips into squares, approximately 8 to 10 cm on each side. ≈ 8 min
- Place the pasta on a lightly floured griddle, then proceed to add the filling.
- Peel the warm potatoes (using gloves or a sponge) and mash them with a potato masher to create a smooth puree. ≈ 8 min
- Let the puree cool down.
- Finely chop the onion, then sauté it in a small amount of hot oil until softened.
- Finely crush the garlic and mint, and grate the cheese. ≈ 8 min
- Add the mint, sautéed onion, pecorino cheese, egg, salt, and a small amount of nutmeg-flavored walnuts to the purée. Mix until a smooth paste forms. ≈ 4 min
- Preheat the oven to 230 to 250 degrees.
- Place a small amount of filling on each square of dough, until all the filling and dough are used up. ≈ 3 min
- For each piece of dough: take the corners and fold them inwards towards the center of the filling, to create a sort of open pouch.
- Place the small bags on a plate, spacing them out evenly. ≈ 3 min
- Place the pan in the oven and bake for about 15 minutes, then give it a final grilling to lightly brown the edges of the small rolls.
- Remove from the oven and let cool for a few minutes in a well-ventilated area, then serve.
