Directions
- Boil the chicken, let it cool, and shred it into thin strips. Wash the herbs, drain them, and chop them into pieces about 1 cm in size.
- Rinse the noodles and blanch them in boiling water for 8 to 10 minutes. They become very soft: 3 to 5 minutes may be sufficient if the water is boiling vigorously.
- Prepare the sauce: sauté the finely chopped garlic until golden, then add the soy sauce, nuoc-mâm, sugar, lemon juice, and chicken stock in the specified proportions. Simmer, then turn off the heat. Thanks to the stock, the sauce is mild and slightly acidic.
- Add some herbs and powdered seasonings to the remaining chicken stock to create a flavorful broth to accompany the chicken.
- In each bowl, arrange the ingredients in the following order: noodles, shredded chicken, French-fried shallots, peanuts, herbs, and sauce.
