Directions
- In a large mixing bowl, combine the flour, kidney fat, breadcrumbs, almond flour, spices, salt, and brown sugar. ≈ 4 min
- Add the zest and juice of oranges and lemons, apples, all three types of grapes, candied fruits, chopped prunes, and, if desired, apricot jam. ≈ 3 min
- Mix the eggs with the rum, reserving a small amount for flambé, and the beer, then pour over the fruit and mix thoroughly. ≈ 4 min
- Cover and let it rest in the refrigerator overnight so that the fruits can absorb the flavors.
- The next day, grease ceramic bowls with butter and fill them up to 2 cm from the rim, packing the mixture firmly. ≈ 10 min
- Cover with a sheet of greased baking paper, then with a cloth or a sheet of aluminum foil, and secure under the rim. ≈ 3 min
- Cook the puddings for 6 hours in a large pot of simmering water, with the water level halfway up the bowls, adding more boiling water as needed.
- Let the puddings cool, replace the parchment paper, and store them in a cool, dry place until Christmas.
- On Christmas Day, warm them for 2 hours in a water bath, then unmold them and flambé them with the warm rum.
