Directions
- Combine the cream, sugar, and syrup in a large, deep-sided pot. ≈ 4 min
- Cook uncovered over medium heat for 15 to 30 minutes.
- The mixture needs to be brought to a boil until it starts to foam.
- Stir the dough occasionally, but not too frequently, as this could make it sticky. ≈ 4 min
- If you would like to add almonds, they should be added just before the end of the cooking time. ≈ 3 min
- Cook the mixture until it reaches a temperature of approximately 120 °C.
- Use a thermometer or perform the “ball test”: place some cold water in a cup and add a small amount of the mixture. ≈ 10 min
- When the mixture can be rolled into a ball, it means that it is ready. ≈ 10 min
- Fill the paper molds with two tablespoons of dough. ≈ 10 min
- The meat becomes tough. ≈ 3 min
