Directions
- Line the bottom and sides of a mold with plastic wrap. ≈ 3 min
- Freeze for hardening.
- In a saucepan, combine the sugar, water, and tartar cream. ≈ 3 min
- Bring to a boil until the syrup thickens.
- Whip the egg yolks until they turn pale and thicken.
- Slowly pour in the warm syrup, while continuing to stir. ≈ 4 min
- Cook in a double boiler until thickened, stirring constantly.
- Let it cool.
- Whip the cream until it forms stiff peaks. ≈ 4 min
- Add it to the cooled mixture.
- Gently pour the mixture into the prepared mold. ≈ 3 min
- Place in the freezer to firm up.
