Congee is a rice porridge eaten throughout Asia. The rice is simmered for a long time in water or broth until it becomes a creamy puree, which can then be seasoned to taste.

Directions
- Place the rice in a pot, then add the broth or water. Bring to a boil.
- Reduce the heat and let it simmer for 1 hour and 45 minutes to 2 hours, until the rice is cooked through.
