The chickpeas used in these falafel are only soaked, never cooked, to preserve their starch content. Mixed with tahini, lemon, and spices, they are formed into patties and can be grilled, fried, or baked.

Directions
- Since the starch in chickpeas is destroyed during cooking, it’s best to soak them for only a short time, ideally up to 24 hours.
- Combine the chickpeas, then add the remaining ingredients. ≈ 4 min
- Season with salt, pepper, cumin, and cilantro. ≈ 2 min
- Shape flat, round cakes (or flattened balls) about 4 cm in diameter. ≈ 10 min
- Cook them in a pan or deep-fry them over medium-low heat. Alternatively, you can bake them in the oven at 225 °C for about 30 minutes.
