Chicken with mozzarella: two ways
Two Brazilian ways to prepare chicken with mozzarella: either baked with corn, or rolled chicken and apple in a white sauce.
These two Brazilian recipes combine chicken and mozzarella. One is a layered casserole with corn, and the other are rolls covered in white sauce.

Directions
Chicken and corn gratin
- Cook the chicken and shred it. Add the corn.
- Thicken the cooking broth with a small amount of cornstarch.
- Line an oven-safe dish with slices of mozzarella, then alternate with layers of chicken, finishing with a layer of mozzarella. ≈ 3 min
- Bake in a preheated oven.
Mozzarella chicken rolls
- Bring the chicken back. Once cooked, shred it.
- Then, return the shredded chicken to the cooking broth.
- Bring back the roasted apples, mix them with the shredded chicken, and let it cool.
- Wrap a small amount of this mixture around each slice of mozzarella, like a crepe. ≈ 3 min
- Place the ingredients in a dish, pour over with white sauce, and bake in the oven.
