Directions

  1. Season the chicken with salt, chopped garlic, and thyme. ≈ 2 min
  2. Keep the broth readily available, next to the pot in which you will be preparing the soup, so that you can use it throughout the process.
  3. Add the olive oil to a large pot. ≈ 3 min
  4. Continue cooking the seasoned chicken until it is golden brown.
  5. Add the onion and cook it until it is softened. ≈ 3 min
  6. Add the chopped garlic cloves, tomatoes, and fresh basil. ≈ 3 min
  7. Bring all the ingredients back to the pot until they are fully cooked.
  8. Add the broth and stir.
  9. Cover the pot and let it simmer until the liquid starts to boil.
  10. Add the white rice, carrots, and potatoes. ≈ 3 min
  11. Once the rice, carrots, and apples are cooked, adjust the seasoning as needed. ≈ 2 min
  12. If you wish, sprinkle finely chopped parsley over the finished dishes. ≈ 2 min
  13. You can also serve it with grated cheese and/or “croutons”. ≈ 2 min
