Satay is a grilled skewer that is very popular in Southeast Asia. This chicken version is served with a rich peanut sauce.

Directions
- Prepare the marinade: In a bowl, combine the lemongrass, galangal, garlic, ginger, soy sauce, sugar, salt, cilantro, and cumin.
- Add the chicken pieces to the marinade and mix well. Let it marinate in the refrigerator for at least 1 hour, ideally overnight.
- Thread the marinated chicken onto skewers and arrange them in a neat row. ≈ 3 min
- Heat a grill or frying pan over medium heat and cook the skewers for about 10 minutes, turning occasionally, until they are golden brown on both sides.
- Prepare the sauce: combine the peanut butter, coconut milk, sugar, soy sauce, lemon juice, and chili pepper in a small saucepan, and heat over medium heat, stirring until smooth.
- Arrange the skewers on a plate and serve with the warm peanut sauce. ≈ 2 min
