Chicken moambe is a dish from the Lusophone African countries, cooked with palm oil and okra. Here are two ways to prepare it, which can be served with funge, rice, or beans.

Directions

Version with vegetables and mushrooms

  1. Clean the chicken, cut it into pieces, and season it with salt. Place it in a pot with the chopped and peeled onions, garlic, bay leaves, chopped and seeded tomatoes, oil, lemon juice, and chili pepper. Simmer over medium heat, stirring occasionally.
  2. Peel the eggplants and zucchini, chop them into small pieces, and add them when the chicken starts to become tender. Gently shake the pan and let it cook.
  3. Once everything is almost cooked, add the cleaned and sliced gombos (also known as Jerusalem artichokes). ≈ 3 min
  4. Thicken with a little cornstarch mixed with water, and let it simmer.
  5. Aside from that, bring 1 litre of water to a boil without adding salt.
  6. Mix half of the flour with warm water and pour it into the boiling water. Stir with a wooden spoon and gradually add the remaining flour, a little at a time, while continuously stirring over medium heat. Use a spoon to break up any lumps and cook for 5 minutes until a thick paste forms.
  7. Place the fungus in a dish and cover it with another identical dish. ≈ 3 min
  8. When serving, remove the top plate, draw a cross on it, and then serve. ≈ 2 min
  9. Serve the chicken and vegetables separately. ≈ 2 min

Traditional version

  1. Season the chicken with garlic, salt, chili pepper, and lemon. ≈ 2 min
  2. Add the chopped tomatoes and onions. ≈ 3 min
  3. Add palm oil paint and set it on fire. ≈ 3 min
  4. When the chicken is almost cooked, add the green beans. ≈ 3 min
  5. Once the plantains are cooked, the muamba is ready to be served. ≈ 2 min
  6. Serve with palm oil-fried beans, funge, or rice. ≈ 2 min
