Directions
- Place water, salt, onion, and the chicken in the pot. ≈ 3 min
- Let it simmer until the chicken is tender (approximately 1 hour).
- Remove the chicken, let it cool, then remove the bones.
- Finely chop the meat. ≈ 4 min
- Remove the excess fat from the surface of the juices. ≈ 3 min
- Measure 3 1/2 cups of this broth into a 6-quart pot.
- Add the rice, pieces of chicken, smoked sausage, herbs, and the “chicken and herbs” seasoning. ≈ 3 min
- Cook these ingredients for 30 minutes.
- Bring to a boil, then reduce the heat and let simmer, always covered.
- If the rice mixture is too watery, cook it uncovered until it reaches the desired consistency.
