Tak polo is a traditional Iranian dish, typical of the city of Shahroud. Here is a modern version featuring chicken.

Directions
- Cut the chicken into small pieces. ≈ 8 min
- Chop the onion and mix it with the chicken. ≈ 8 min
- Add the pineapple powder, powdered mustard, soy sauce, salt, and saffron to the chicken, and let it rest in the refrigerator for at least 1 hour to allow the flavors to develop.
- Wash the mint leaves, chop them up, and cook them in a pot for a few minutes.
- Next, drain them. ≈ 2 min
- Prepare the rice using either the “kete” (steamed rice) method or the “abkasht” (rice cooked in water) method. Mix it with the mustard leaves and let it rest for a few minutes.
- In the same pot, add the oil paint and the chicken. ≈ 3 min
- Let it cook until it is golden brown, then add a little turmeric and spices.
- Let it simmer for a few minutes with a little water to ensure it cooks through properly.
- Serve with rice. ≈ 2 min
