Directions
- In a bowl, whisk together the eggs and add the salt, pepper, tomato puree, sherry or port wine, ground coffee, grated cheese, and some butter. ≈ 4 min
- Remove the white part of the orange peel and either grate it or cut it into very small pieces. ≈ 8 min
- Melt the remaining butter in a small saucepan or ceramic dish, then add it to the egg mixture.
- Let it simmer over low heat, stirring constantly with a fork or spatula, until it is almost completely thickened.
- Sprinkle the egg fondue with freshly grated lemon zest just before serving. ≈ 2 min
