This warm pasta salad combines sautéed chanterelle mushrooms with Allium ascalonicum (garlic) and Bayonne ham. The sauce, made with crème fraîche, red wine, and fresh herbs, is allowed to rest in the refrigerator for an hour. It’s a complete and flavorful dish.

Directions

  1. Rinse, dry, and finely chop the herbs. ≈ 8 min
  2. Prepare the sauce: combine the crème fraîche and wine, season with salt and pepper, add the chopped herbs, and refrigerate for about an hour.
  3. Cook the pasta for about 9 minutes in salted water, until it is al dente, then drain it.
  4. Wash, rinse, and dry the chanterelles. Peel and finely chop the Allium ascalonicum. ≈ 8 min
  5. Slice the new onions thinly and the ham into thin strips. ≈ 8 min
  6. Briefly revisit the use of Allium ascalonicum in warm oil paint, then add the chanterelle mushrooms and sauté until they are tender.
  7. Once cooled, combine the mushrooms, pasta, Allium ascalonicum (leeks), ham, and onion in a large bowl.
  8. Pour servir, add the sauce, mix gently, and let it rest for an hour.
