- Preheat the oven to 190 °C (375 °F).

- Grease a 1-liter cast iron pan. ≈ 3 min

- whisk the egg yolks and sugar in a bowl until light and fluffy, and a pale color. ≈ 4 min

- Finely grate the carrots and apple, then squeeze them to extract all the juice, which should then be discarded. ≈ 8 min

- Combine the grated carrots, apple, orange peel, orange juice, lemon juice, and flour. ≈ 4 min

- Combine the carrot mixture with the egg yolks and sugar. ≈ 4 min

- whisk the egg whites until they are very stiff, then gently fold them into the carrot mixture. ≈ 4 min

- Pour une cuisson uniforme, pour over the mixture into a greased casserole dish. ≈ 3 min

- Bake in the oven for 35 minutes, or until the surface is golden brown.
