Directions
- Clean the carp by removing the internal organs. Make an incision along the gills and cut off the back of the fish. The head and skin are “inflated.” For the gills, cut out the bones to make them easier to inflate and keep the skin attached to the head. ≈ 8 min

- Thoroughly wash the carp fillet. Cook it lightly so that it separates from the bones. Cut it into small pieces, season with salt, and place it in a dish with a thinly sliced onion. If you think the amount of fish is not enough, add more.

- Add 50g of shelled broad beans (it’s best to lightly chop them in a food processor), 50g of sardines, and a pinch of orange zest, along with a small amount of black pepper. If the broad beans are salty, lightly sprinkle them with salt. Fill the “skin” and reshape it so the carp looks whole. Dredge it in flour and cook in a pan with a little oil and a cup of white wine. It can also be cooked on a grill.

- Serve with sautéed broad beans (either mountain broad beans or ham hock beans) and a broad bean juice. ≈ 2 min
