This Basque dish from the region of Biscaye features tender veal cheeks, sliced and then breaded, which simmer in a Basque-style sauce with dried chili peppers. Prepared the day before, it only becomes more flavorful.

Directions
- Cook the snouts: Place water in a pot with two carrots, two leeks, and one onion. Add the snouts and bring to a boil for 2 hours (approximately 30 minutes in a pressure cooker). Remove the snouts and let them cool. Strain the broth into another pot and set aside.
- For the Basque sauce, wash and chop the onions, then sauté them in a little oil. After five minutes, add the chopped garlic and cayenne pepper. Then add the chopped tomatoes, followed by a glass of white wine. Bring to a boil to reduce the alcohol. ≈ 8 min
- Add three or four ladles of beef broth and the dried chili peppers, which you have previously seeded and de-stemmed. Simmer for about twenty minutes. Remove the chili peppers, scoop out their flesh, and return it to the sauce. Pass the mixture through a Chinese sieve, then season with salt.
- Cut the pig’s cheeks into slices, then pass them through flour and beaten eggs, and fry them. Repeat with all the slices. Then place them in the Bayonne sauce and simmer for about fifteen minutes, allowing the sauce to thicken and become smoother.
- The dish, prepared the day before, will be even more delicious. ≈ 3 min
