Directions
- Preheat the oven to 200 °C.
- Cut the pumpkin in half lengthwise and remove the seeds. ≈ 8 min
- Rub the onion and squash with olive oil. Cook them uncovered for about 1 hour, or until they are tender. Let them cool slightly.
- Add the pumpkin pulp to a food processor. Add the onion and 1 to 2 cups of chicken broth. Blend until smooth.
- Pour this into a saucepan. Add the garlic, sherry, and nutmeg-flavored walnuts, and stir over medium heat. ≈ 4 min
- Add the remaining ingredients and cook until they are heated through. Season to taste.
