This classic Burgundy dish is best served hot, with a baguette for dipping into the butter. Each snail shell is filled with parsley butter, followed by a snail, and then more butter.

Directions
- Remove the snails from their shells and rinse them. Finely chop the parsley, garlic (which you can crush with a mortar and pestle), and shallots. ≈ 8 min
- Mix them with the softened butter, add the salt and pepper, and work until you have a smooth dough. ≈ 4 min
- Place a small ball of flavored butter in each shell, add the escargot, and then top with more butter, pressing it down gently. ≈ 10 min
- Place the shells on a baking dish and, if desired, sprinkle with a little breadcrumbs. Bake in a preheated oven at 200 °C for 10-15 minutes.
- Serve hot with a baguette. ≈ 2 min
